Steven Rinella knows meat. As host of the Sportsman Channel’s Meateater hunting show — produced by the same crew behind Anthony Bourdain’s Parts Unknown — Rinella, 41, tracks, kills and cooks his dinner for a living. And now, with the release of his whopping new 400-page guidebook The Complete Guide to Hunting, Butchering, and Cooking Wild Game, Volume 1 (Volume 2 covers small game and fowl is due in December) he’s letting you in on his secrets. “For me, food is a metaphor that’s just too powerful,” Rinella says. “I don’t believe we should only eat animals raised in factories — and this book came out of the show.” Written for beginners interested in tracking their own dinner to more experienced hunters looking for a big trip out west, Rinella’s book is a thoughtful, well-written and photo-packed guide to the outdoors. Here he shares four of his favorite recipes from the book’s cooking section. “These recipes work great with domestic meat like beef, lamb or pork,” he says. “But it doesn’t have the same meaning to me because I’m in love with the age-old process of hunting for your own food. I derive more satisfaction from my dinner table than I do from my professional life — and I have a great job.”
