Hama Sushi’s in Los Angeles
A handwritten sign duct-taped on Hama Sushi’s front door reads: Only Sushi, Sashimi. No Tempura. No Teriyaki. No Noodles. No Rice Alone. The instructions may seem off-putting, but the chefs inside the no-frills shoebox-size sushi spot are surprisingly boisterous, especially if you buy them a beer. Located in L.A.’s Little Tokyo, Hama does not offer omakase; the day’s specials are prominently featured on small white boards peppered around the restaurant. Sit at the bar and order up buttery tuna, luscious uni, and delicate sweet shrimp (which they do dare deep fry as a separate appetizer of shrimp heads).
