Q in Los Angeles
Q in downtown L.A. is a modern, sleek sushi bar with a rustic brick wall, 26-seat counter, and hanging orbs of lights. Three avid fans of Chef Hiroyuki Naruke wooed him and his wife from their six-seat Tokyo sushi joint to open Q in 2013. Specializing in Edomae-style sushi, Naruke implements a fish-fermenting technique called nekaseru, and he mixes California rice with sea salt and red vinegar made from aged sake cake. His omakase menu (courses selected for patrons by the chef) features seafood sourced from all over the world, including chutoro from Spain, fluke from South Korea, and salmon from Scotland.
