Yamakase in Los Angeles
Some might argue that chef Kiyoshiro Yamamoto was a little too “traditional” for American tastes when he served endangered Sei whale at the now shuttered (and unfortunately named) Hump restaurant in Santa Monica. Slapped with a fine and community service, Yamamoto went on to open Yamakase, an invitation-only restaurant in L.A.’s Sawtelle Japantown. The super-secret eatery is tucked in a strip mall and features a 20-plus-course omakase menu that on any given night could include baby eel, cod milt, monkfish, and uni, ice fish, and king crab imported from Hokkaido, Japan.
