Yui Edomae Sushi in Las Vegas
In two short years, Chef Gen Mizoguchi became a household name in Las Vegas for his Edomae-style sushi at Kabuto. Fans were shocked when he left Kabuto in 2014, but much to everyone’s relief, Mizoguchi quickly opened Yui Edomae Sushi the following year. A second-generation sushi chef, Mizoguchi pays attention to details, from sake that’s made in-house to sushi rice husked on-site. Inside the stark restaurant adorned with dramatic flower arrangements, guests sitting at the 10-seat blond wood bar savor an omakase menu of lobster, grouper, eel, and yellowtail that are all flown in from Japan.
