Saffron’s “”The Lamb Bacon ‘BLT'”, Minneapolis, MN
Why would anyone mess with the sublime combination of bacon, lettuce, and tomato? The only reason we can justify would be substituting in lamb belly bacon, the thought of which is almost too much to bear. Saffron’s in Minneapolis cures their own in-house and serves it on vanilla egg challah that has been coated in lamb fat before hitting the grill, with tarragon aioli and tomato jam. Fanciful, sure, but also delicious.
