At the Brown Hotel in Louisville, there is one dish everyone must eat: the Hot Brown, an open-faced turkey sandwich that has been lauded by numerous magazines and TV shows for its creamy richness. The Mornay sauce, made of roux, heavy cream, and Pecorino, is hard to beat, and the turkey is sliced thick and paired with bacon. And true to the style of the South, the bread used in the Hot Brown is Texas toast, crusts trimmed. It’s easy to see why this meal has been around since at least the 1920s.
