The warning that accompanies any recommendation of Aaron and Stacy Franklin’s renowned barbecue restaurant in Austin, Texas, has to do with the line. Depending on when you get there (they open at 11 in the morning, and they close when they sell out), you could be waiting up to 3 hours for a taste of their famous smoked brisket. But the wait is, of course, worth it. Franklin Barbecue uses an all-wood-fired smoker to smoke their meats—no gas, no electric, just fragrant oak—and their seasoning is as simple as it gets, because their technique doesn’t need much more than that. With just salt and pepper, the restaurant has sold out of brisket every day it has been open. It’s the kind of thing you want to wait for.
