The Best Way to Make Barbecue Country-Style Ribs

Country-style ribs don’t come from the rib cage and don’t always have bones. “But they’re easy to cook and always juicy and flavorful,” says Boston chef Ken Oringer—especially glazed up with a Mexican Coke–based sauce.

 

Want to make them on your own? Here’s exactly how to prepare these delicious country-style ribs at home for your next BBQ.

  • 1⁄2 onion, chopped
  • 2 garlic cloves, minced
  • 1⁄4 cup soy sauce
  • 1⁄4 cup extra virgin olive oil
  • 1 12-oz bottle cola (preferably Mexican Coke)
  • 1⁄2 bunch fresh cilantro, chopped
  • 1 lb country-style pork ribs
Combine ingredients, except ribs and cilantro, in blender and blend until smooth. Pour mixture into a container large enough to fit ribs. Add ribs and chopped cilantro and marinate at least 4 hours, preferably overnight.
Prepare a grill for medium-high heat. Grill ribs until crispy and caramelized, 5–7 minutes per side, flipping and basting with the marinade frequently. Serve immediately.
