Chorizo
Chorizo has its origins in Spain and Portugal, and numerous variations exist depending on the spice added to the meat within the casings. Paprika might be used in sausages that originated in Spain, while a locally-grown chile pepper might be used in their Mexican-made equivalent, for instance. Grilling techniques for Chorizo and Italian sausages are similar: generally, the size and shape of what’s being grilled will be similar, even if the taste ventures into decidedly different territories.
