Dogfish Head took its beloved 60 Minute IPA recipe — continuously adding hops over a 60-minute boil — and essentially doubled it. The Delaware brewery says 120 can land anywhere in the neighborhood of 15 to 20 percent alcohol, but we've found little variation in the flavor from batch to batch. Despite the massive amount of hops that go into 120, the alcohol and residual sugar minimize the bitterness for the brew that tastes pleasantly like hops candy.
