No machine mimics the brew-purist’s method of choice, the manual pour over, better than this one. It holds water temperature in the range considered ideal by the Specialty Coffee Association (198° to 202°). Plus, it’s programmed to maximize the flavor in fresh-roasted coffee: Before flooding the ground beans with water, it splashes them lightly and lets them soak for 30 seconds. This pre-infusion phase—what baristas call the “bloom”—allows ground coffee to open up and vent off trapped gasses.
