Shaun Hill ages his superb Anna farmhouse ale — brewed with a large helping of Vermont honey — in French oak wine barrels for “as long as it requires to reach its apex.” The oak conditioning introduces microflora to an already complex brew, resulting in a subtly funky saison that’s hard to match. The last release of Ann, in January 2015, required a concert-like ticketing lottery, where the Hill Farmstead faithful could enter for a chance at a bottle.
