Coravin Allows High-End Wine By the Glass
Sampling high-end wine at restaurants is a pricey endeavor, with choice bottles easily costing triple digits. Then there’s the issue of volume: Buying a bottle of wine commits you to an entire bottle. Not the world’s worst curse, of course, but it precludes wide sampling. The solution to both problems is the Coravin, a system that lets you serve wine via a small needle without removing the cork or letting oxygen in. Top-flight restaurants from New York City’s Eleven Madison Park to San Francisco’s Saison have embraced the technology, news that, for wine lovers, should leave their glasses half full.
