The Cabana Boy
Alicia Rebensdorf, of the Shipwreck Lounge in Brooklyn, says the Cabana Boy is a classic tiki combo of rum, juice, and orgeat (a sweet syrup), but the fino sherry adds a nice dry salinity, so it’s not cloying. “Sherry is one of my secret weapons in tiki drinks because it can also contribute acidity and nuttiness to [their typical] sugar bombs.”
Ingredients
- 2 oz aged rum
- 1 oz fino sherry
- 5 oz orgeat
- 1.5 oz passionfruit nectar
- absinthe rinse on glass
- tarragon, for garnish
(Serves 1)
Directions
1. Combine all ingredients, shake, and serve on ice, preferably crushed. Garnish with tarragon.
Tip: You can either blend the drink with ice, or just mix and serve on crushed ice.
