Torre Washington’s White Bean and Avo Toast

You don't have to call it avo toast if you don't want to.

Avocado toast isn’t just the trendiest food on your Instagram feed—it’s also packed with protein and good-for-you fats. This version is sure to give you an extra boost of energy with an extra boost of protein thanks to the addition of white beans.

  • 2 slices Ezekiel bread, toasted
  • 3/4 cup cooked white beans, drained and rinsed (cannellini, white kidney, and great northern work best)
  • 1/3 avocado
  • 8 grape tomatoes, sliced
  • 1 Tbsp fresh lemon juice
  • 1/3 scallion, chopped finely
  • 1 small handful fresh cilantro, chopped
  • 1/4 tsp garlic powder
  • Sea salt, to taste
  • Cayenne powder, to taste

Add white beans into a medium-size mixing bowl. Using a potato masher, mash until almost completely creamy.

Add avocado, and mash.

Stir in garlic powder, lemon juice, sea salt, and cayenne. In a separate bowl, combine tomatoes, cilantro, and scallions.

Top toasted bread generously with bean and avocado mix, then with the sliced tomato mix to create two open-faced sandwiches.
