There isn’t a more impressive appetizer to serve on New Year’s Eve—or for any kind of party, for that matter—than perfectly shucked oysters on a bed of shaved ice. Sure, they may seem intimidating, at first, but they’re actually quite easy to prep. All you need is the right tool: an oyster knife with a short, stubby blade and a thick, sturdy handle. What’s even better is that oysters are low-cal (6 medium raw oysters are under 50 calories), high-iron foods that’ll help boost your energy levels and your immune system. And yes, they may even help your sex life, since they’re high in zinc—the mineral linked to healthy sperm production and circulation.
We recently caught up with Forty North Oyster Farms at the New York City Wine & Food Festival. In this how-to video, Scott Lennox shows us how to shuck an oyster:
- Under cold running water, scrub any dirt from the shell with a stiff brush.
- Firmly hold the oyster against the table in a folded towel with the hinge side toward you and the cup side down.
- Insert the knife through the hinge, angling the blade down into the cup of the oyster. When you feel the knife sink in, use a twisting motion to pry the shells apart.
- Scrape the blade across the top of the shell, removing all the meat and muscle. Remove the top shell.
- Repeat across the bottom shell, sliding the knife under, and loosening the oyster from its shell.
- Serve and enjoy immediately.
