Sheet Pan Chicken Dinner
On a large sheet pan, spread out 4 trimmed chicken thighs, 2 handfuls of quartered red potatoes, a small diced onion, and a diced bell pepper. Drizzle 2 tablespoons of olive oil and shake 2 teaspoons of all-purpose seasoning over the chicken and vegetables. Toss it all up to coat evenly. Bake at 400 degrees Fahrenheit on the convection setting until the chicken is done (about 30 minutes). Transfer the chicken to a plate and stir the vegetables. Bake the vegetables until the potatoes are browned and fork tender (about 5-10 minutes).
